I found some andouille sausage at the store the other day so i grabbed a pound of big gulf shrimp and made some gumbo tonight ;D I didn't want to have to have a big "trial and error" night with amounts of spices so i just used a box of the zatarain's gumbo. Buuuut i threw in a good amount of my blackening seasoning (which has incredible flavor) I marinated the skrimps in a butter/lemon/old bay/blackening seasoning mixture while i pan fried the sausage and brought the rice/mix to a boil. Definitely going to add more rice next time, JT and i both like it waaay too much. i definitely ate too much of it though.. we ate a little over 3 hours ago and i'm STILL stuffed. thats why i can't meet yall for lunch, i have zero will power to say no to any cajun or creole food. anyways, i made halfass gumbo (since it wasn't completely homemade) and it was awesome so I'm awesome. Go LL's team!

Sounds like ya'll ate good anyway.. I like your new look in your avatar..I noticed they changed mine also. Those coonazz's in La. sure can cook some good gumbo. I was about scared to eat it. They just kept throwing stuff in there I had no idea what it was. ??Said it was nutra meat???

Yea they told me a little later on what they where. Said those things where introduced because people thought they could trap them and sell the hide (back years ago). Story they told was it didn't go over as planned and the population exploded. Anyway no Nutrea in my Gumbo bowl PLEASE.

Red, its the little bottle of zatarains blackening seasoning. I've tried about 20 different brands but this one tastes the most authentic and has the most heat to it. A lot of the others were too salty or had flavor but no spice..
