Stolen from Nitro's post on another forum:
Make a Roux ( 1 cup oil, 1 cup flour) .......or use Tony C's instant Roux ( easier) whisk frequently until the consistency of thick gravy - cook roux until the color of chocolate ( or add some Kitchen Bouquet for color) put Roux into a Dutch oven or soup pot .
Breasts from 4-5 ducks, cut into bite sized chunks , coat in Tony C's and brown in a skillet with some oil. Put into Dutch oven.
Chop and saute the Holy Trinity ( 2-3 onions, 2 Bell peppers and 6 stalks of celery) season with sea salt and black pepper- put into dutch oven.
Cut 2 links of Savoie's Andouille into small chunks- into dutch oven, add in one can of crushed Tomatoes, add some crushed garlic (to taste) add one 8 oz box of chopped frozen Okra if desired, stir in 8 cups water and simmer for an hour or so until all ingredients are combined.
Top with some chopped green onions, serve over some steamed rice. Add a few shakes of Crystal Hot Sauce.
